Castle Dairies brandy butter topped Christmas pudding

Ingredients

125g Castle Dairies butter, softened
125g icing sugar
1 tbsp boiling water
3 tbsp brandy
1/2 tbsp vanilla bean paste

Method

In a large bowl, gradually mix together the butter and icing sugar, until smooth, then whisk for 30 seconds.

Whisk in the boiling water, brandy and vanilla, until soft and smooth.

Serve immediately, with mince pies or Christmas pudding.
