Brown Butter Cookies
Ingredients
• 120g Castle Dairies Salted Butter
• 125g Light Soft Brown Sugar
• 50g Granulated Sugar
• 1 Large Egg, at room temperature
• 1 Tsp Vanilla Extract
• 1 Tbsp Milk
• 180g Plain Flour
• 1 Tsp Cornflour
• ¼ Tsp Baking Powder
• ¼ Tsp Bicarbonate of Soda
• 100g Dark Chocolate, chopped
• Sea Salt Flakes (optional)
Method
• Add the butter to a saucepan and melt over a medium heat, stirring throughout.
• Once melted, the butter will begin to foam and sizzle.
• Keep stirring and the butter will turn a golden brown with a nutty aroma.
• Remove from the heat and immediately pour the brown butter into a heatproof bowl. Set aside to cool.
• In a large bowl, mix together the cooled brown butter with the sugars.
• Add the egg, milk and vanilla and mix.
• In a separate bowl mix together the flour, cornflour, baking powder and bicarbonate of soda.
• Add the dry ingredients to the wet ingredients. Mix until combined.
• Mix the chopped chocolate into the dough until evenly distributed.
• Chill the dough in the fridge for 2 hours.
• When ready to bake, preheat the oven to 200°C /180°C fan and line a tray with baking paper or a silicone baking mat.
• Divide the cookie dough into 12 equal balls.
• Place the balls of dough onto your prepared baking tray, making sure to leave space for the cookies to spread. You may need to bake the cookies in two batches.
• Bake in the oven for 8-10 minutes.
• Leave the cookies on the tray for 10 minutes, then transfer to a wired rack to cool.
• Sprinkle some sea salt flakes on top and enjoy.
