Parkin Muffins
Ingredients
300g self-raising flour
100g oats, plus extra to sprinkle
1 tbsp ground ginger
100g golden caster sugar
200ml black treacle
3 eggs
250ml milk
125g Castle Dairies butter, melted
To decorate:
Icing sugar
Equipment:
A 12-hole cake tray
12 muffin cases
Method
Preheat the oven to 180°C/160°C fan/gas mark 4 and fill the cake tray with the muffin cases.
In a large mixing bowl, mix together the flour, oats, ginger and sugar.
In a jug, whisk together the treacle, eggs, milk and melted butter, then stir the wet ingredients into the dry ingredients thoroughly.
Divide the cake batter between the muffin cases and sprinkle with oats, then bake for 20-25 mins, until risen and firm. Allow to cool.
Dust with icing sugar and serve.
